I have a question about the recipe "Birthday Lasagna" from Merrill Stubbs. Any tips on subbing turkey (or another ground poultry) for the beef? I'm making this for Christmas dinner!

I've made this so many times I know it by heart. My personal favorite is using spicy and/or sweet turkey sausage (removed from the casings) instead of the beef.

I haven't made this specific lasagna, but I often sub ground turkey for beef in lasagna, etc. (sometimes w/part ground pork too.) Works fine, no big adaptation necessary.
I think sexyChopx suggestion of turkey sausage (or part sausage, part ground turkey) would work great too.
