I bake about an hour more or less. You can poke them with a small sharp knife, if they feel "crispy" inside they need more time; if the knife goes in smoothly they are done.

until they're done!! just poke them with a fork. And you need to say how much you have chopped and what kind!! How can people help you if you can't tell all the details?
Most of the time if you're cooking for more than one, putting about 2 cups of chopped potatoes at 350 will take forever!! suggestion: put them up to 400 and check them every 15-18 minutes depending on how crispy you like them. Also, you didn't say what you have on them. Olive oil? seasoning?
