Most of the time if you're cooking for more than one, putting about 2 cups of chopped potatoes at 350 will take forever!! suggestion: put them up to 400 and check them every 15-18 minutes depending on how crispy you like them. Also, you didn't say what you have on them. Olive oil? seasoning?
I bake about an hour more or less. You can poke them with a small sharp knife, if they feel "crispy" inside they need more time; if the knife goes in smoothly they are done.
