The cylinder for my ice cream maker isn't cole enough. Can I add gelatine to the ice cream mix (it's a simple mix, no cooking or eggs) & make mousse?

Do you not have time to wait for it to be cold? To determine what you can do with it, I'd need more details on what a "simple mix" is. You could probably add flavoring (raspberry?), a bit of gelatin and some whipped cream to lighten it, but in what proportion, I don't know.

I don't have enough time for it to get cold. It's been living in the freezer for weeks but we've had really hot weather and I think that may have affected the freezer temp.
It's sugar, cocoa powder, milk, cream and vanilla with a bit of Triple Sec for extra flavour. I've made it many times with no issues.

Yeah, some whipped cream and some gelatin would help. You'll end up with somewhat of a bavarian cream, which is nice. For every 2 cups liquid, I'd bloom 2 t. powdered gelatin in like ¼ c of the mixture. Then heat it gently to dissolve the gelatin before mixing it in. Fold in ¾ c. - 1 c. cream, whipped and quickly get it into a dish or mold before it sets up.
