Doubling a recipe.

I am making Filipino lumpia and wanted to double the recipe. I doubled everything and ended up with too much pepper.

It's not always a strict multiply by factor of 2 to double. Have a look at this helpful article:

I think seasoning with salt & pepper should always be "to taste" (for baking always measure the salt!). I would make the filling, then taste it for what you think it needs... season it & taste again. That's kind of my rule of thumb for everything I cook.
