Hello. How do you cook a beets by avoiding a discoloring of pots? Thank you.

Wrap whole beets (with a bit of salt, pepper and olive oil) in foil package and roast about 45 minutes to one hour at 400F.
You may want to put the package on a frying pan or baking pan, in case of leaking. Even if a bit of leaking, relatively easy to clean.
