It's higher in butterfat, resulting in lower percentage of water, so it's better for pastry, by a lot.

I agree its higher in butterfat I use it for pastry, have used both land o lakes and plugra and see and taste a noticable difference in my pastry. I like to ;use the unsalted for pastry its really good.
