That depends on the cup capacity of your Bundt pan, really. A 9x5 loaf pan, which the recipe calls for, holds 8 cups. A 10 inch Bundt pan will hold 12 cups total. Doubling the recipe could leave you with too much batter to safely bake in the Bundt pan without overflowing batter in the baking process. You could fill the Bundt pan appropriately for the size, and then bake the remaining batter in muffin cups to create mini pound cakes. Those would bake in about 25 minutes, as a rule- but test centers with toothpick to be certain.
