Can I make the filling for an Easter Wheat Pie a day or two in advance?
I make a traditional Easter Wheat Pie. The filling has soaked wheat that has been cooked in scalded milk, egg yolks, sugar, citron, lemon rind, ricotta cheese, and folded in stiff egg whites. If I prepare this the day before, will that be OK? Would the egg whites deflate? How about if I do it all except the egg whites? I am looking to save some time on the day I have to make it since I have to also do the crust.
