There are also recipes out there devised from the start and tested without eggs. No, i haven't made them either, but they may be worth a look....using mashed potatoes, flax seed, etc

PS Most of the ones without eggs tend to be vegan, but you could add back any dairy-based ingredients you like and your daughter can eat. Also the best ones I know of use mashed potatoes, which give a nice texture. For example, here's one in a link.

Hi! I haven't tested this, but you could try a few of these options instead of the egg: 3 tablespoons aquafaba (the liquid in canned chickpeas); OR 2 tablespoons cornstarch/potato starch + 3 tablespoons water; OR 1 egg's worth of a vegan egg replacer like Bob's Red Mill or Just Egg

Thank you both for your prompt replies ! I’m going to make a version tomorrow. I don’t have potato starch on hand, but do have arrowroot, so will try with that in place of the egg.

Also will this work with a glass Pyrex pan ? Or a Le Creuset stoneware pan ?

Probably yes with either in the oven.
I'd be cautious/wary about stovetop use. Before doing that, check the manuals or websites for safety and use instructions.

I did not test with a glass/ceramic baking dish, so I can't say for sure that the latkes will turn out as crisp as they would in a sheet pan, where you'll have heat conduction from the metal, as well as more surface area. But feel free to try and let us know how it goes!

There's no stovetop cooking in this baked latke recipe, so I wouldn't worry about that!

Rebecca - agree with you that glass or ceramic pan won't give as crisp a latke as sheet pan. Only saying those could work.
