Hi, do you have any suggestions for an egg substitute?

Soft tofu, 2 oz or 1/4 cup for every large egg in a recipe. Purée the tofu, then add to recipe.

Works in casserole/ savoury dishes and baked/ sweet ones.

From many years vegetarian cooking.

I haven't tried it myself, but I'm guessing a classic flax egg would work!
