dry the skin or leave it wet?

It seems like the powder would stick better to the vertical surfaces it it wasn't patted dry.

hi! as Madison notes below, you should still pat the turkey dry per the recipe instructions—there will be plenty of residual moisture on the skin for the dry brine to adhere.

Hi there! Patting the turkey dry should only remove excess moisture, and there should still be plenty to help the powder stick to your bird.
