Sauté leeks with garlic. Remove the casing from Louisiana hot link sausage and brown with leek/garlic combo. Once browned, add yellow bell pepper, salt and pepper. When bell pepper is fragrant, add vegetable broth and a can of undrained tomatoes, plus two-ish cups of water. Add half cup of lentils, paprika, thyme, and a touch more pepper. Bring to boil, then simmer till lentils are cooked through. Easy spicy sausage & lentil soup for all!
