Moist, fluffy supercharged with blueberries and topped with fine milled blueberry flaxseed for an extra dose of Omega-3?s, protein and fiber!

What You'll Need
Ingredients
  • 2 cups Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Ground cinnamon
  • 1 pinch salt
  • 1 egg
  • 3/4 cup Vanilla yogurt
  • 1/4 cup Agave
  • 1 teaspoon Vanilla extract
  • 6 ounces Blueberries
  • 1/4 cup Fine milled blueberry flaxseed
Directions
  1. 1. Preheat the oven to 375 degrees. Great muffin tin or line with paper liners. 2. In a large bowl, whisk together the egg, vanilla yogurt, agave and vanilla extract. 3. Combine the flour, baking soda, cinnamon salt and stir into the wet mixture. 4. Fold in the blueberries and spoon batter into tins. 5. Sprinkle flaxseed over the tops of the batter 6. Bake for 20-25 minutes.

You can purchase it various places, including Trader Joe's. It is so easy to ground your own flax seed and less expensive. I am of the opinion you could mix the blueberries in with the ground flax seed and it would work.
