I selected this recipe out of many 'pear tart' options because I knew I wouldn't find close-to-ripe pears. And, because I am not a fan of baking and the idea of rolling out a crust is very intimidating to me.
This came together so easily, despite several mistakes on my part (using pears with very different levels of ripeness, choosing the wrong size tart pan, etc), and is such a showstopper. I didn't want to toss the juices leftover from roasting the pears, so I reduced down to a glaze and brushed it on the pear slices peeking out from the brown butter filling. Gave it a lovely extra punch of pear flavor, I think.
Is it the best pear tart I've ever eaten? No—the crust works out very well but it's still a shortcut. However, the tart is solidly delicious and clearly foolproof (if I can make it). Highly recommend!

WOW, this turned out amazing. So delicious. I loved the way the pears were roasted, I loved how the crust was made and I loved the brown butter filling. Really outstanding.

I used your approach to roasting the pears and they were delicious! I wanted a light dessert, so didn't try the brown butter tart. The recipe is saved for another time. But you are so right about the long roasting. Bosc pears were still firm enough to serve without falling apart.
