Trader Joe's Linguine with Clam Sauce

Inspired by a friend's Facebook post about Trader Joe clams. —askann

What You'll Need
Ingredients
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • pinch red pepper flakes
  • 2 can Trader Joe's cherrystone clams
  • 1 can diced tomato
  • splash white wine or vermouth (optional)
  • pinch oregano
  • handful spinach or other greens
  • 1/2 lb linguine
Directions
  1. Boil large pot of salted water.
  2. In a large skillet, heat olive oil
  3. Add garlic. Stir until fragrant. Add red pepper flakes.
  4. Add liquid from canned clams -- but not the clams themselves -- and the can of tomatoes. Add wine or vermouth, if using. Simmer and allow to thicken.
  5. Add pasta to boiling water.
  6. When sauce is thickened, add clams and oregano.
  7. When pasta is done, reserve some pasta water and drain. Add to saucepan.
  8. Add spinach/greens and stir until wilted.
  9. Season with salt and pepper.

THIS IS KILLER GOOD! I MADE AS DIRECTED, ADDED NO SALT, USED NO GREENS , 6 CLOVES OF GARLIC FOR 2 PEOPLE, AND I USED WHAT I HAD, DRY SHERRY INSTEAD OF THE MENTIONED ALCOHOL IN RECIPE.
HUSBAND FLIPPED!!!! KEEP ON COOKING!!!
