While covering a story for a design magazine about an eco-friendly hotel in Buenos Aires, I had two surprises: a run-in with U2's Bono... and this incredible arugula, olive oil, lime and tequila cocktail.

This drink is quite the anomaly. Named the "green rocket" because I think that the UK and Australian word for "arugula" (rocket) is much more fun than arugula, it is the cocktail you serve first... and explain later. Guests will never assume that obscure ingredients like olive oil, arugula or egg white comprise this drink: the flavors come together to create a creamy drink with a slight kick from the tequila and a cleansing citrus finish from the lime. The arugula? Not present in taste (no bitter or pepper flavors) but certainly present in the drink's beautiful bright green color. —Sedimentality

Ingredients
  • 4 ounces tequila
  • 1/2 cup chopped arugula (rocket)
  • 1 juice of 1 lime
  • 3 tablespoons olive oil
  • Pinch salt
  • 1 egg white
Directions
  1. Combine all ingredients in a blender. Pulse into emulsified.
  2. Serve in a champagne flute (better to view the beautiful fizzy white top of the drink). Garnish with a lime wedge if you would like.

Thanks! I'm glad I'm not the only one who is in awe of this drink! If you like tequila, I do suggest that you try it: it tastes nothing like I expected to the first time I tried it.... it tasted better!!! :)

Wow! How did someone ever come up with this amazing combo. Great color, too. (though I admit I want to call it the Soylent Green Rocket!)
