Author Notes

No oil, dressing, vinegar, or salt. Requiring only three ingredients, this refreshing tomato salad is deliciously simple and great in the summer. Use two medium basil leaves and one rounded tablespoon of feta per tomato. Although room-temperature tomatoes provide more flavor, a more refreshing salad can be made by chilling the final salad for a half hour before serving. —Ghost Tropic

What You'll Need
Ingredients
  • 2 tomatoes
  • 2 tablespoons crumbled feta
  • 4 medium basil leaves, thinly sliced
Directions
  1. Core each tomato, cut in half, and remove jelly and seeds. Cut into 1/4 inch slices and place into a bowl with the basil.
  2. Add the feta using well rounded tablespoonfuls, then gently toss to combine. For a more refreshing salad, chill for 30 minutes before serving. Serve with sliced French bread, or a similar crusty bread.
