“Nur Karotten”: carrots, deconstructed

Author Notes: Sometimes the best roasted vegetables are the simplest ones. These carrots look funny, shriveled up and brown, but they taste like pure honey. Give them a try and let us know what you think. Come and cook with us!

Serves 4

  • 1 pound fresh carrots, orange or purple
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Your oven!
  1. Preheat oven to 400F.
  2. Wash and slice carrots into 1/2 inch rounds.
  3. Place carrots onto a baking sheet.
  4. Drizzle with olive oil, salt and pepper and toss to coat lightly.
  5. Spread across baking sheet.
  6. Roast for 45 minutes.
  7. Serve.
