When it starts to get chilly out, I love a warm bowl of oatmeal and good mug of tea. I find myself making this a lot in the mornings. —laurenp81

What You'll Need
Ingredients
  • 1/3 cup rolled oats
  • 2/3 cup light coconut milk
  • 1 tablespoon pumpkin pulp
  • 1 tablespoon ground flaxseed
  • 1 teaspoon good vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 tablespoons dried cranberries
  • 1 tablespoon slivered almonds
Directions
  1. Mix ingredients in a microwave safe bowl or mug.
  2. Microwave on high for 2 minutes or until cooked to the desired consistency.
  3. Let cool for a minute or two.
  4. Enjoy!

This sounds so tasty! I bet it would be good with a few chunks of butternut squash I roasted the other night, which are patiently sitting in my fridge. I was actually thinking, this morning, about how I should figure out how to work some of that squash for breakfast. Thanks so much for posting this recipe! ;o)
