Pac-Man Brussels Sprouts

So called because, well, look at the photo. I wish I could have uploaded a .wav file to play the music from the original arcade game to go along with it; failing that, you can just hum Weird Al Yankovich's song "Pac-Man", set to the tune of the Beatles' Tax Man. Soon to come: Space Invaders String Beans and Asteroids Artichokes. —wssmom

What You'll Need
Ingredients
  • 1 pint brussels sprouts
  • extra-virgin olive oil
  • 3 cloves garlic, smashed, skin left on
Directions
  1. Preheat oven to 375 degrees F. Using a paring knife, cut the brussels spouts in half, and then cut out the core of each. This allows the leaves to separate a bit while cooking and get nice and crispy.
  2. Toss the sprouts with a bit of olive oil, spread on a baking sheet along with the smashed garlic cloves and sprinkle with salt and pepper. Bake 20 minutes or so, until nice and golden. And crispy.

Good way to persuade the children to eat up their greens, assuming that they know PacMan.

I read the headnote looking for the story -- how did you get on this kick? (I pictured you cutting out a blemish, holding up the sprout, saying, That looks like...) We should have locals soon to try it with. I love the simplicity.

I'm totally on board with your recipe. It's exactly the same way we make it in our house. I think roasting is the best way to do brussel sprouts - love to see the husband and the older son fight over the crispy outer leaves!
