Roasted Red Onions

Onions have been used in Irish Cooking for such a long time, but this simple recipe was one I came across while doing some research about Irish Food. My 14 year old son loves these. He told me that he now prefers these to onion rings..! —Rachel Gaffney

Ingredients
  • 2 Large Red Onions
  • olive oil
  • kosher salt
  • freshly milled black pepper
Directions
  1. Pre Heat oven to 425 degrees F. Cut Onions in quarters and leave the skin on. Sprinkle with olive oil, kosher salt , pepper and bake for 40 minutes.
  2. Serve these onions with the skins on.
  3. These roasted onions are so deliciously sweet.
