Onions have been used in Irish Cooking for such a long time, but this simple recipe was one I came across while doing some research about Irish Food. My 14 year old son loves these. He told me that he now prefers these to onion rings..! —Rachel Gaffney

Ingredients

Large Red Onions

olive oil
-
kosher salt
-
freshly milled black pepper
Directions

Pre Heat oven to 425 degrees F.
Cut Onions in quarters and leave the skin on. Sprinkle with olive oil, kosher salt , pepper and bake for 40 minutes.

Serve these onions with the skins on.
