What to do with half a container of arugula??? Make some delicious spring pesto!
This is amazing smeared on some garlic toast, dolloped into a soup, spread in homemade pizza, great on grilled fish and vegetables and of course on pasta, it's my go to for cold pasta salad.
It also freezes really well in a container or ice cube tray for single servings. —themisinthekitchen

Ingredients

3 cups
Arugula
-
1/3 cup
Walnuts
-
Zest of 1 lemon
-
1/2 cup
Parasean cheese
-
Handful
Fresh mint
-
1/3 cup
Olive oil
Directions

Combine all the ingredients except for the olive oil in a food processor and pulse 10-15 times until finely chopped and combined.

Turn the food processor on and slowly add the olive oil through the feed tube until creamy.
