What to do with half a container of arugula??? Make some delicious spring pesto!

This is amazing smeared on some garlic toast, dolloped into a soup, spread in homemade pizza, great on grilled fish and vegetables and of course on pasta, it's my go to for cold pasta salad.

It also freezes really well in a container or ice cube tray for single servings. —themisinthekitchen

Ingredients
  • 3 cups Arugula
  • 1/3 cup Walnuts
  • Zest of 1 lemon
  • 1/2 cup Parasean cheese
  • Handful Fresh mint
  • 1/3 cup Olive oil
Directions
  1. Combine all the ingredients except for the olive oil in a food processor and pulse 10-15 times until finely chopped and combined.
  2. Turn the food processor on and slowly add the olive oil through the feed tube until creamy. Enjoy!!!

Just made this. I didn't know how the 1/3 c. of cheese was to be prepared for adding to the food processor, so I grated it. Might want to edit this one thing. I added a bit of salt to it and squeezed about 1/4 tsp. of lemon juice in as well. Very tasty.
