Author Notes: The combination of honey, mint and lime is the best way I know to brighten up an early- or late-season melon. Use a mild honey such as orange blossom. —Lucy Mercer
- 3 cups cantaloupe cubes
- 1/2 lime, juiced
- 2 tablespoons honey
- 1 teaspoon minced mint
- 1 pinch salt
- Place cantaloupe in bowl. In a measuring cup, whisk together lime juice, honey and pinch salt. Pour dressing over melon, then sprinkle with mint. Stir together and serve.
