Green Pea Salad

This dish was always requested by my father-n-law when they would come to visit. I love the blend of cheddar and Velvetta cheese along with the soft and crunch of the texture. My son now asks for this side salad to be made about once a month. —Simply Gourmet

  • Makes 6 cups
  • 4 cups Frozen peas
  • 1/2 cup Diced Celery
  • 1/2 cup Diced Onion
  • 1/2 cup cubed cheddar or jack cheese
  • 1/2 cup cubed Velvetta cheese
  • 2 Hardboiled eggs, diced
  • Lawrys salt to taste
  • 1/2 cup Mayonnaise
In This Recipe
  1. In a large colander, run your frozen peas under water to thaw. Keep them firm but not frozen. Drain well.
  2. In a large bowl, combine all of your ingredients and gently mix. Add more mayonnaise if you like your salad creamier.
