Dress up your polenta quickly with our Roasted Tomato Basil soup! Easy and delicious for lunch or dinner.


Serves: 2

  • 1 Boulder Soup Works Roasted Tomato Basil Soup
  • 4 ounces prepared polenta
  • 1 tablespoon goat cheese
  • 1 teaspoon fresh basil or oregano
  1. There are plenty of easy-to-make or prepared polentas at your local grocery. Prepare polenta according to directions and serve in a shallow bowl.
  2. Heat Roasted Tomato Basil soup.
  3. Smother polenta with hot Roasted Tomato Basil soup.
  4. Add a little goat cheese on top for a creamy finish.
  5. Don’t forget to sprinkle with fresh basil or oregano!
  6. Pair with white Viognier.
