Apple Cider Winter Waffles with CaramelizedĀ Apples

It just felt like winter this morning and regular waffles just weren't going to cut it. We drink massive amounts of apple cider this time of year and I thought its flavor would be perfect for a waffle. My son requested oatmeal for breakfast so I thought I would make this batter partly from finely ground oatmeal. Topped with apples caramelized in some salted butter these waffles have everything I look for in the morning. I used pumpkin pie spice in mine because it is easy, but you could substitute equal parts cinnamon, nutmeg, and allspice. —meganvt01

Ingredients
  • Caramelized Apples
  • 2 honeycrisp apples, chopped into 1/3 inch pieces
  • 2 tablespoons salted butter
  • 2 teaspoons brown sugar
  • Apple Cider Waffles
  • 1/2 cup finely ground quick cooking oatmeal (processed in a food processor)
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 egg, separated
  • 1 cup apple cider
  • 1 teaspoon honey
  • 2 tablespoons Vegetable oil
  • 1 Pinch kosher salt
  • 1/4 cup Whole wheat flour
Directions
  1. Caramelized Apples
  2. Melt butter in a skillet over medium-high heat. Add apples and brown sugar and cook for about 5 minutes until the apples are browned. Lower the heat to medium low and cook an additional 5 minutes until the apples are softened, but still have a bit of crunch on the inside.
  1. Apple Cider Waffles
  2. Mix the dry ingredients in a bowl.
  3. Mix the apple cider, egg yolk, oil, and honey in another bowl or large cup.
  4. Beat the egg whites until they form stiff peaks
  5. Add the wet ingredients to the dry and stir well to combine. Fold in the egg whites. Cook in your waffle iron according to the the manufacturers directions. Mine was set to medium and cooked for about 4 minutes.

Just tried these and had a few issues. The flavor was really great (I added a pinch of salt to bring out the other flavors) , but the waffles turned out a bit soggy- I tried adding some oil to the remaining batter, but that didn't help much. I made them primarily to freeze and have for breakfast during the week, so I'm hoping they'll crisp up in the toaster. Cool idea, and very healthy, though!

I have had that problem with various waffle recipes from time to time. I'll make this one again and see what happens and see if I can make any adjustments. Thanks for your feedback!

I remade them with oil and salt which I realized I left out of the original recipe. Def not soggy :)
