Ingredients

Carrots peeled and diced

Leek, washed and sliced thinly

1/4 piece
of celery root ( can omit )

1
onion, diced

1
Bag of lentils
-
2 quarts
of chicken stock and some water to top off

1 or 2 splashes
Vinegar (German - Essig Essenz) or japanese clear vinegar to taste

1 packet
Mild Polska Kielbasa sausage, cut up in pieces

2 pieces
Good quality Sliced bacon cut in pieces

2 pieces
Medium Yukon gold potatoes diced
Directions

Start by cutting up two pieces of bacon and cook them until almost brown in a large soup pot.

Cut up the following vegetables:
2 Carrots
1 Leek
1 small piece of celery root ( can omit )
2 celery stalks
1 onion

add vegetables to the rendered bacon and cook until slightly browned.
Add 1 Bag of lentils and 2 quarts of chicken stock.

Cook until lentils are done (about 20 min.) Add salt and pepper & Vinegar (German) to taste. Add 2 cut up potatoes after 10 min. of cooking. (Vinegar can be purchased from Ditmers in Los Altos, or ordered online. )

Once lentils and potatoes are tender add one cut up Polska Kielbasa sausage for taste. One can also mash some of the potatoes a little which adds a little more body to the soup, but do so before adding the sausage. Another tip is to add a few sautéed diced onion until brown and top off soup. We make German crepes with apple sauce with this soup. Bon Appetite :)
