Quick, Easy, Non-Greasy Spiced Roasted Almonds

I love roast almonds, and I love them spiced, but I find that when I use oil to make the spices stick they sometimes come out unpleasantly greasy. I tried water, and it solved the problem. You can add whatever you like. Have fun. —drbabs

What You'll Need
Ingredients
  • 1 pound raw almonds
  • 1 tablespoon kosher salt
  • 1 teaspoon sugar
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cayenne
Directions
  1. Heat oven to 350. Place the almonds in a large bowl. Wet your hands and toss the almonds with wet hands till they are all slightly damp. Add the salt, sugar and spices, and continue to toss with your hands (wet as needed) until all the almonds have some of the spiced coating clinging to them. Pour the almonds onto a large cookie sheet and spread them into one layer. Sprinkle any remaining spices over the almonds. Roast at 350 for about 30 minutes, or until crisp and fragrant.
