easy breakfast full of love. working as a cook, breakfast at home is a luxury and a fuss free event on most mornings. this recipe came about on a lazy week day morning where i opened my fridge and let the ingredients on hand shine bright on their own. —eyeoftheavocado

What You'll Need
Ingredients
  • 1 fresh bagel
  • 2 tablespoons creme fraiche
  • 1 shallot
  • 1 dry farmed tomato
  • 2 teaspoons butter
  • freshly milled salt & pepper
Directions
  1. cut and toast a fresh bagel, while that i€™s getting toasty, slightly warm some creme fraiche by scooping a few tablespoons in a bowl and whisking with some salt and pepper. once that looks spreadable, slice both some tomatoes & some shallots.
  2. once the bagel is toasty, assemble as follows, if you are a butter lover and are no€™t afraid of it, spread a thin layer on each side of the bagel, do the same with the seasoned creme fraiche, add the tomato slices, the shallots & a little more freshly milled salt & pepper. enjoy while it’s still hot, it will be delicious.

Hey B, thanks for letting me know, i have reposted the original recipe. so weird. I have personally read the recipe in the past, some phantom bagel hater must have deleted it? ha. enjoy.
