Ingredients
  • 6 eggs
  • 1 tablespoon mustard
  • 1 clove of garlic
  • 6 pieces oyster mushroom
  • 2 tablespoons cooking oil
  • salt and pepper to taste
Directions
  1. Lightly beat the eggs with mustard. Add salt and pepper to taste.
  2. Mince garlic. Heat the cooking oil on a wok or pan, sautee garlic until fragrant, add the oyster mushrooms.
  3. Mix the beaten eggs, mix well so it won't stick on wok/pan. Cover for a minute if you want a firm omelette.
  4. Serve as is or with Salade Verte. Enjoy!

Very good, though I had to add some cheese (manchego), because how can you make an omelet without cheese? I used Dijon mustard. One to make again.
A spelling note: omelet is American English spelling; omelette is British English. Take your pick.

Not mentioned cooking oyster mushroom. how time sautee the mushroom with garlic oil.

Seems like an incomplete recipe, doesn't it? I don't think it means to use raw mushroom, so I sauteed mushroom and garlic in a bit of butter
(or use olive oil) until the mushroom pieces were tender, about 3-4 minutes.

Mmmhh The oyster mushroom have an amazing texture, it's a great Idea in Omelette. Simple and delicious!
