Homemade Pizza

Homemade pizza that tastes just like the Italian ones sold in quarters, so called pizza al taglio. —Ana Maria Vasconcellos

What You'll Need
  • 5.2 cups flour
  • 1 teaspoon brewer's yeast
  • 1.9 water
  • 1.5 teaspoons salt
  • 0.5 teaspoons sugar
  • 5 tablespoons extra virgin oilve oil
  • tomato sauce
  • oil
  • fresh basil leaves (optional)
  • oregano
  1. Put the flour on your working surface or into the bread machine bowl.
  2. Add the water where you have melted the yeast and work the dough until it becomes uniform.
  3. Add little flour if needed (the humidity of the air may vary this quantity).
  4. Add the oil you have previously mixed with the salt and the sugar and work until it absorbs all.
  5. Put oil in the middle of the pan – this recipe is enough for two 35x25cm/13.7×9.8in pans.
  6. Using your palms, enlarge the dough to cover the whole pan (having put the oil in the middle, as you enlarge the dough, the oil will follow).
  7. Cover it with plastic wrap and let it rest for about one hour.

  9. Add the tomato sauce and spread it all over the pizza, except the borders.
  10. Put it into the oven and let it color on the borders.
  11. Take it out from the oven, add mozzarella cut in small cubes, basil leaves and oregano.
  12. Put into the oven again until the mozzarella melts.
