Ingredients

carrots, quartered and cut into 2-inch lengths

1 tablespoon
sugar

2 tablespoons
butter

1/2 teaspoon
coarse salt

a large pinch of
ground cinnamon

Fresh ground pepper
Directions

In a skillet bring the carrots, sugar, butter, salt, and 1/2 a cup of water to a boil. Add the cinnamon and stir. Reduce heat; simmer, partly covered, 6 minutes.

Cook uncovered, over high heat, tossing often until tender, 3 to 4 minutes. Transfer to a bowl. Season with pepper.
