When strawberries start popping up at our local berry stand, it's always cause for celebration in our house! We tend to gobble them up quickly, but I do like to set some aside for other delicious options, such as this Strawberry Vinaigrette. Strawberries, white wine vinegar and honey get a quick whiz in the food processor and yield a bright, fruity, rosy pink dressing. I like to drizzle some over fresh mozzarella and baby spinach as a riff on caprese salad for a delightful lunch. —BlueKaleRoad

Ingredients
  • 2 1/2 cups strawberries, sliced
  • 4 tablespoons white wine vinegar
  • 1 tablespoon honey
  • A pinch of kosher salt
Directions
  1. Puree all the ingredients in a food processor until smooth. Store vinaigrette in a covered jar in the fridge for up to one week.

I made strawberry vinegar every spring and use it for all kinds of salads. Thanks for the reminder, and most of all for this great recipe with the honey. It must taste heavenly!

Strawberry vinegar sounds marvelous, Susan! I can imagine it would be lovely in salads. I can't wait for our berry stand to set up...always such a delicious time of year.
