Serves 2

  • 2 skinless, boneless chicken breasts
  • 1 bunch fresh spinach leaves
  • 2 pieces light brie
  • 2 tablespoons dijon mustard
  • 2 teaspoons fresh chopped rosemary
  • 1 pint salt and pepper
  • 2 whole wheat buns
  1. trim off fat and pound out to an even thickness
  2. season with salt, pepper, and rosemary
  3. grill 4-5 minutes per side over medium heat until no longer pink in the middle
  4. grill buns if desired
  5. assemble burgers with dijon, spinach leaves, and brie
