- 8 cups cubed, peeled, russet potatoes
- 3 garlic cloves, peeled
- 1/4 cup butter
- 1/4 cup mayonnaise
- 1/4 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 teaspoon each of thyme, oregano and rosemary
- Cook potatoes and garlic in salted water.
- When done, add remaining ingredients and mash.
- Ready to serve!
