Poached Salmon with Piquante Sauce

What You'll Need
Ingredients
  • Piquante Sauce
  • 3 tablespoons low fat mayonaise
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon skim milk
  • 1 tablespoon capers
  • 2 teaspoons juice from capers
  • 1 1/2 teaspoons dijon mustard
  • 1/4 teaspoon grated lemon rind
  • Salmon
  • 3 pieces salmon
  • 3 cups boiling water
  • 1 small lemon
  • 2 teaspoons instant chicken bouillon powder
Directions
  1. for the sauce, mix together all ingredients in a bowl and set aside.
  2. In a large frying pan, bring 3 cups of water to a boil. Add lemon, thinly sliced.
  3. Add instant chicken bouillon powder.
  4. Add salmon, cover and simmer for 10 minutes. Or you can barbecue salmon in tinfoil until cooked.
  5. Pour heated sauce on top and serve.

This is a favourite recipe of mine from one of The Best of Bridge cookbooks called “That’s Trump” published 1995. I’ve made it so many times over the years, have changed how I cook the salmon but always make lots of the sauce to go with.
