Fusilli with Fresh Tomatoes, Basil and Feta

Serves: 4

  • 1/4 cup oil
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon each of salt, pepper and dry oregano
  • pinches hot pepper flakes
  • 2 cups cherry tomatoes, halved
  • 4 cups spiral pasta
  • 1/2 cup fresh basil
  • 6 oz feta
  • 1/4 cup fresh grated parmisan cheese
  1. Whisk together oil, red wine vinegar, salt and pepper, dry oragano, and hot pepper flakes.
  2. Cook pasta, and place sauce from above on top.
  3. Add tomatoes, stir in basil, add feta and toss. Sprinkle with parmisan cheese.
