Chickpeas make this super simple salad a more substantial way to enjoy fresh summer fruit. —Big Flavors

Ingredients
  • 1 lime, zested and juiced
  • 2 tablespoons extra virgin olive oil
  • 1 avocado, peeled, pitted and diced
  • 2 mangoes, peeled, pitted and diced
  • 15.5 ounces can chickpeas, rinsed and drained
  • 2 tablespoons cilantro, chopped
  • sea salt and freshly ground black pepper, to taste
Directions
  1. Whisk lime zest and juice with oil in a large bowl.
  2. Add avocado, mangoes, chickpeas and cilantro.
  3. Season to taste with salt and pepper and toss gently to combine.
  4. Serve and enjoy!

Oh my goodness! So simple, fresh and delicious! I added a quarter of a lime more, to add a little more citrus kick. Great idea!

So glad you enjoyed it! Since writing this one, I've started measuring out things like citrus juice since the size/juiciness can vary so much.
