I didn’t have any beets on hand so I thought I’d share with you my sweet potato chips. You can use the same recipe to make beet chips. Just be sure to wear gloves when working with beets, it can get messy!

Ingredients
  • 1 Sweet Potato
  • Extra Virgin Olive Oil
  • Salt & Pepper to taste
Directions
  1. Line a sheet pan with parchment paper and pre-heat your oven to 350° F. Set the mandoline to 1/8” thick and slice the sweet potato. You can also slice the sweet potato thinly with a knife. {Leave the skin on, that’s where all the nutrition is!} Toss the sweet potato slices with olive oil, salt & pepper. Lay on sheet pan in a single layer. Bake 10-12 minutes until crispy and the edges are golden brown.

So I tried this and the chips did not really crisp up. They got a bit soft, like a baked sweet potato. Any tips to ensure crispness?
