This is one of the first dishes I made in my first apartment, at the beginning my years totally on my own in a new city (& state). It was from a book by Pierre Franey. I don't remember which book or even what he called it, but Green Rice seemed appropriate for the green components in it. Comes together in about 10 minutes, at the most. So simple, I (& you) can probably make in my sleep. —HalfPint

Ingredients
  • 3 cups cooked rice, any kind you like
  • 1 cup very fresh peas (shelled) or frozen peas
  • 1/2 cup julienned fresh basil
  • 3-4 tablespoons good quality butter, salted or unsalted
  • salt, optional
Directions
  1. In a large non-stick skillet or wok, melt butter over low heat. Raise heat to medium. Add peas and cook for about 1 minute.
  2. Add rice and mix gently & thoroughly to get the butter to coat the rice and to distribute the peas. Cook the rice mixture for about 3-5 minutes on medium or until the mixture is hot through out.
  3. Turn off heat and mix in the basil. Taste and add more salt if needed. Serve hot or warm.
