My mom used to make this for us when there was extra rice left over from dinner. Of all her many Filipino ways to get us to eat more rice, this was our favorite. I was surprised a couple years ago to see it in an issue of Real Simple magazine as a Fake It, Don't Make It recipe. Gently stir a scoop of very good quality vanilla ice cream into some hot rice. Add ice cream as necessary to reach a creamy but not runny consistency. Stir in a shake or two of cinnamon, if desired. Spoon into tulip dishes. Refrigerate until well chilled, top with a dollop of whipped cream and a shake of cinnamon, and serve.
