Serves 2 people

  • Handful of rocket leaves
  • Handful of spinach leaves
  • Handful of pea shoots
  • 4-5 sliced baby tomatoes
  • A quarter of a cucumber diced finely
  • 1 finely chopped spring onion
  • 75g of cubed cheddar cheese
  • 1 packet of ready salted crisps
  • 1 tbsp olive oil
  • 1 tsp of balsamic vinegar
  • Salt and pepper to taste
  1. Mix all the vegetables and salad together then season with olive oil, balsamic vinegar salt, pepper then mix in the crisps.
