Quinoa with edamame and sundried tomatoes

I'm the kind of cook that comes up with recipes with what I have on hand. Always have quinoa and sundried tomatoes in my pantry. This quick and easy recipes is great as a side dish. —easygrub

What You'll Need
  • 1 cup Quinoa
  • 2 cups Chicken broth
  • 2 tablespoons sundried tomatoes (not in oil)
  • 1/2 cup Edamane
  • Dash Salt
  • Dash pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  1. Cook quinoa with the broth according to package directions.
  2. When quinoa is done add edamanes and choped sundried tomatoes stir then drizzle with olive oil, add salt and pepper to taste. Put lid on pot let sit for five minutes. Serve with a squeeze of lemon juice and a little more olive oil.
