Chocolate Chip Mini Muffins

Adapted from the Chipits Mini chips recipe I have attempted to make it slightly healthier while still being yummy and kid approved. They are great snacks for after school and freeze very well. I hope you like them! —TammieK

Ingredients
  • 1 1/2 cups buttermilk
  • 1/2 cup vegetable oil
  • 1/4 cup cups apple sauce
  • 3/4 cup granulated sugar
  • 3 eggs beaten slightly
  • 2 cups all-purpose flour
  • 1 cup whole wheat cake and pastry flour
  • 1 1/2 teaspoons baking soda
  • 1 packet mini semi sweet chocolate chips
Directions
  1. Preheat oven to 375F. Combine buttermilk, vegetable oil, apple sauce, sugar and eggs. Mix well
  2. In a separate bowl mix flours and baking soda with a whisk until combined
  3. Mix wet ingredients with dry ingredients until combined and stir in chips.
  4. Scoop into greased mini muffin tins until almost full.
  5. Bake for 8-10 minutes or until tester comes out clean.
