Basil Goat Cheese Toast with Fresh Peaches

Toast is my go-to afternoon snack, and sometimes it needs a little sprucing up. The simple 'herbed goat cheese + some vegetable/fruit' is probably my favorite formula; it can go so many directions, and takes advantage of what's ripening in the garden or on my counter. I used the basil goat cheese I'd been eating off all week (with tomatoes), and added a little honey to welcome in the fresh peaches. Really, goat cheese toast is a vessel for pretty much any lovely combination your kitchen offers. —spacekase

What You'll Need
Ingredients
  • 3.5 ounces goat cheese
  • 5 sprigs basil
  • 2 slices hearty bread, thickness is up to your preference
  • 1 ripe peach, sliced thick
  • honey
Directions
  1. Remove leaves from basil sprigs, stack them and roll them up, and slice as thinly as you can. Mix this basil with your soft goat cheese. I make up a big batch of this and keep it in the fridge all week.
  2. Toast your bread, spread the basil goat cheese thickly (I usually use about half of the amount this recipe makes). Drizzle honey across the top, and layer on the peaches.
