What You'll Need
white onion chopped
minced garlic cloves
slices of ginger
Saute onions, garlic, ginger, till soften. Put in the coconut milk and a splash of chicken stock. Then mix in the chile, soy sauce, rice vinegar, sugar and curry paste. Let simmer for couple of minutes.
Put the coconut milk mixture in the blender and blend with salt, basil and mint till smooth.
Put the sauce back into the pan and simmer then cook the ground turkey in another pan with oil till brown. After it gets brown throw it into the sauce for 10 minutes till it is cooked. Serve with rice or noodles and enjoy.
