Angel Hair Pasta with tomatoes, basil & garlic

A very comforting, vegetarian pasta dish —Peter Block @ Feed Your Soul Too

  • Serves 6
Ingredients
  • 12 ounces ripe grape tomatoes
  • 3 tablespoons olive oil
  • 1/2 Red Onion
  • 1 tablespoon minced Garlic in oil
  • 1 tablespoon ground Thyme
  • 1 teaspoon Sugar
  • 1/4 cup grated parmesan
  • 1/4 cup fresh Basil

Directions
  1. Heat a large saute pan over medium high heat
  2. Add the olive oil and warm
  3. the oil is hot, add the onions and garlic and saute for 2 minutes
  4. Add the spices, herbs and saute until the garlic begins to turn golden brown
  5. Add the tomatoes and the sugar and stir well
  6. Lower the heat and cook slowly letting the flavors merge
  7. Add the Parmesan and basil and toss well. Enjoy
