Man-About-Town with IPA Simple Syrup

This cocktail was created by Kenaniah Bystrom, bar manager of Essex. The IPA syrup is a cinch to make, and very much worth the effort. If you're looking for other uses for the syrup, try it in a riff on an Old Fashioned: shake together 2 ounces rye whiskey, 2 dashes orange bitters, and 1/4 ounce IPA syrup. Strain; then garnish with an orange peel. —MollyandBrandon

Ingredients
  • The cocktail
  • 1 1/2 ounces bourbon or rye
  • 1/2 ounce Campari
  • 1/2 ounce IPA syrup (see below)
  • 1/2 ounce freshly squeezed lime juice
  • 1 lime wedge, for garnish
  • The IPA syrup
  • 12 ounces IPA (ideally a light, floral IPA, such as Avery - or, barring that, Sierra Nevada Pale Ale)
  • 1 teaspoon orange flower water
  • 12 ounces granulated sugar
Directions

  2. In a cocktail shaker, combine the bourbon (or rye), Campari, IPA syrup, and lime juice. Add ice, and shake vigorously for 10 to 12 seconds. Strain into a coupe or martini glass, and garnish with a lime wedge.

  2. Combine the beer and orange flower water in a saucepan, and bring to a simmer. Add the sugar; then remove the pan from the heat, and whisk until the sugar is fully dissolved. Chill thoroughly before using.

I had a couple of these the other night - great cocktail! The IPA syrup represents in a nice suble way. I usually shift from Negroni's to Boulevardier's around this time of year; however I think I'm going to mix up a batch of these babies instead.

I liked this, but there is very little IPA taste. I'm going to experiment with less sugar and see how it turns out. If you're a big beer fan and you're hoping for a delicious marriage of all these flavors, I think you would be a bit disappointed.
