Green Coconut Rice

Author Notes: This rice recipe is a simple dish that goes great with fish, chicken or pork. I casually nickname it "aromatherapy rice" because of its fragrant scent. It combines fresh herbs with the richness of coconut. I usually make this with cilantro, but its great with fresh basil, parsley or mint in any combination. —Chrissie Graboski

THE RICE

cup jasmine rice

cups water

pinch salt
THE GREEN SAUCE
-

can of coconut milk
-
1
bunch fresh herbs like cilantro, mint, parsley or basil

lime, zested and juiced

salt
to taste
- Make your rice. Add 1 cup rice to a sauce pan and add 2 cups water with a pinch of salt. Bring rice to a boil, cover with a lid, reduce to minimum and cook rice for 20 minutes or until fluffy.
- In the meantime, make the green sauce. Add everything in a blender and blend it until well combined. You'll have a bright green liquid. When the rice is done, add the green sauce from the blender right into your rice pot. Stir well. Serve hot.
