Super Simple. These naturally purple sweet potatoes stand on their own and taste even better than they look! —Fam to Table

Ingredients
  • 2 Purple Sweet Potatoes
  • 2 heap tablespoons Coconut Oil
  • 2 pinches Salt
  • 1 pinch Coconut Flakes
Directions
  1. Roast in the oven for about 45mins. Once soft and gooey inside remove the skin (bake skin further for crispy veg chips) and place the inside in a large bowl. Smoosh into a mooshy gooshy mash. Add coconut oil and salt. Smoosh further. Garnish with coconut flakes. Serve up.

It's actually not too sweet. The coconut oil gives it a nice nutty flavor. You could try butter, olive oil or even plain greek yogurt instead!

Is this dish on the sweeter side with the coconut oil? Could there be a substitute with dairy products?
